Soup of the Week Week 2 Creamy Tomato Basil Bisque



This is one of the easiest soups ever. Again, I just use my crockpot to minimize dishes and keep free to do other things! I need easy - I have a crazy week ahead as we roll into 2012!

Ingredients:

1 can of tomato soup
2 cans of diced tomatoes
3 Tbsp chopped fresh basil (I use basil in a tube - it's great)
1 tsp black pepper
1 cup of heavy cream
Salt to taste

Pour tomato soup into crockpot, add 1 can of tomatoes, undrained. Add 2 cans of water. Drained juice of second can into crock pot. Line a baking sheet with foil and spread second can of tomatoes on to foil. Place in a 250 degree oven for about 45 minutes or until slightly charred. When charred, add to crockpot. Add basil, salt and pepper. Cook on high for 7 hours. Add cream and heat through.Serve with My Favorite Caesar Salad.


My Favorite Caesar Salad


1 head Romaine Lettuce, torn into bite size pieces
1/4 cup GOOD Parmesan Cheese, grated
Croutons
1/2 cup Ken's Creamy Caesar Dressing
2 Roma Tomatoes, Sliced
2 Tbsp diced Jalapeno


Mix diced Jalapeno and Dressing and toss with Lettuce. Top with sliced Roma's, Parmesan and Croutons.
